Cranberry-Orange Biscotti

2 c flour
7/8 c sugar
3/4 t. baking soda
1/4 t. salt
1/2 t. cinnamon
1 t. orange zest, or zest of 1 orange
3/4 c. dried cranberries
1/4 c. chocolate chip, mini size
2 ea eggs
2 T. vegetable oil
2 Tbs Orange juice

Combine dry ingredients in a large bowl. Combine liquids and whisk together. Add to dry ingredients.

Shape dough into a 16 inch roll. Place on a baking sheet covered with cooking spray, and flatten to about 1 inch thick.

Bake at 350 degrees for 30 min. Remove, cool 10 min. Cut into 1/2 inch slices. Place cut sides down on baking sheet. Reduce heat to 325 degrees and bake 10 min. Turn cookies over and bake about 14 more minutes.
