Pecan Waffles

1 C. self-rising flour (or add 1 t. baking powder to regular).

1/2 t. baking soda

2 eggs, separated

1/3 c. melted butter

1 c. buttermilk or sour milk

1/2 c. pecans (optional)

Heat waffle iron. Combine flour & soda. Combine egg yolks, butter & milk. Stire egg mixture into flour. Beat egg whites and fold into batter.
